Fajita Nachos Recipe from Every Day with Rachael Ray

Who doesn't love nachos?
Loving the idea of this recipe from RR.

INGREDIENTS:
  • 2 tablespoons extra-virgin olive oil (EVOO)
  • 1 pound ground sirloin or chicken
  • 1 red bell pepper, seeded and chopped
  • 1 red onion, finely chopped
  • 3 to 4 cloves garlic, chopped
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • Salt and pepper
  • 3/4 cup beer
  • One 9-ounce bag flax seed tortilla chips or whole grain tortilla chips
  • 2 cups shredded monterey jack cheese
  • 2 jalapeno chiles, thinly sliced
  • 2 ripe plum tomatoes, cut into small cubes
  • 1/3 cup cilantro or flat-leaf parsley leaves (a generous handful)
  • 2 lime wedges
DIRECTIONS:
  1. In a large skillet, heat the EVOO, 2 turns of the pan, over medium-high heat. Add the ground meat and cook, stirring, until browned, about 10 minutes. Add the bell pepper, onion, garlic, thyme, cumin and coriander; season with salt and pepper. Cook until tender, about 5 minutes. Pour in the beer and cook, scraping any browned bits from the bottom of the pan.
  2. Preheat the broiler. Arrange the chips on an ovenproof platter. Cover the chips with the meat, cheese and jalapenos and broil until the cheese is melted. Top the nachos with the tomatoes and cilantro; squeeze the lime wedges over the nachos.


I think I also liked the suggestion in one of the comments to use jarred jalapenos vs fresh.
I think you could also use an non-alcoholic beverage/liquid to de-glaze.  Maybe beef stock?

Hot & Muggy!

I finally tried the Egg Mug Classic recipe not too long ago & LOVED it!!!
It was so easy & simple, not to mention delish!
The only thing I did different was that I used a wedge of Laughing Cow light garlic & herb,
instead of the plain, because that was what I had on hand.
Would definitely recommend!

So excited when I opened my email earlier this week to find that HG has done 3 more!


YUM, can't wait to try!

Carrot-Parsnip Latkes

so, in honor of the Festival of Lights, we made this recipe on Friday, December 11th.

Here's what it looked like all mixed up & ready for frying.
I grated the onion & prepped all the other ingredients.


Jon helped a lot with the frying part.
This is a stack of them keeping warm in the oven.
I think this is the first time we've ever made latkes.  It was a fun way to get the kids involved in the process.  We did use whole eggs instead of just the whites though--what was I going to do with random yolks hanging around?  I loved how it was a team effort!

Daa Bin Lou aka Chinese Hot Pot

more a method than anything else, can also be considered the Chinese version of fondue?
Bernice & I kind of decided to do this last minute while I was showing her the wonders of our local Assi market.  To be honest, I had never done this on my own.  I only remember having this @ Aunt Jenny's house in UT, a long time ago . . . although Bernice claims that Mom did it @ home too.  It was a really nice way to celebrate the last night of Bernice's visit on Saturday, December 5th.

This is the only pic Jon got of the sauces.
Bernice used her mad skills to mix us some unique ones.
You can also see the mussels that we used to make broth.

We used our rice cooker to keep everything warm.

Our beef, fish, & shrimp balls.
We used a mung bean noodle that was friendly to Jon's allergies.

This was a Chinese veggie that Dad recommended we use.
But I can't recall the name of it!  ;P
You can also see the tofu puffs & the bean sprouts that we used.
Jon & the kids seemed to like it--this was their first time.  I think we will try to put this into regular rotation.  It really is perfect for those cold winter nights.  Plus it really isn't all that hard.

Sorry to be a tease again with no pic,
but totally forget to take one before they all got eaten!

Tried a version of this last night with what I had on hand.
It didn't turn out quite as good on tv . . .
but l didn't use "exactly"what they asked for in the ingredients!

It was a fairly easy fun new recipe to try--would definitely do again.
Perfect, since I had a version of all ingredients on hand.
Fun way to have breakfast for dinner.

Gotta love eggs!
Jon said they looked really good.
His wished he could have one.
(He's allergic to eggs.)

Crider Chronicles: Our "Award-Winning" Golden Ladle Chili


In case you missed it on our blog.
Have no idea why I didn't take a pic of it before we took it-duh.
Maybe because I wasn't expecting it to win a prize! ;)

We really liked the level of heat in it.
We think it's what other people would consider spicy.
But it wasn't so spicy (to us) that you
couldn't taste all the other flavors/textures.

Here's our tweaks, (in addition to the chili powder one
mentioned on our blog):
we doubled it & instead of using double the pork,
we did half ground pork & half ground turkey.

Everybody seemed to like it.
I think more than half of it was gone.
Would definitely make again.

Here's the story behind the mini cheesy corn meal muffins . . .
because normally, I would've used my go-to Bastian family recipe here.

For some reason or other, we had a whole bag of this
that needed to get used up,
(can't remember what we bought this for!),
so I used the handy recipe on the side!
It was perfect, because I already had all the ingredients on hand.

They were mini because I used my mini muffin tin.
If you're going to do that though, make sure you double the recipe.
That yielded enough to fill the entire mini muffin tin (24),
plus a few leftover regular size muffins (3).
They were cheesy, because I used that variation.

Everybody seemed to like them--didn't have any left to bring home!

As they say, use it up, wear it out, make it do, or do without!

  • Baked Bean Medley - Received this recipe from Don's mom this past year. She won first place at a ward chili cook-off using this recipe many years ago when Don was growing up....
    8 years ago
