Chocolate Coconut Ricotta Pudding

this recipe from SATC sounds yummy!


Total Time: 15 minutes

Serves: 4


Ingredients:

•    2 cups part-skim ricotta cheese
•    2 tablespoons unsweetened cocoa powder
•    4 tablespoons confectioners sugar
•    1 teaspoon vanilla extract
•    1/3 cup flaked coconut
•    3 tablespoons dark chocolate chunks or mini chips
•    ¼ cup chopped cherries

Instructions:

1)    In a large mixing bowl, combine part-skim ricotta, cocoa powder, confectioners sugar, vanilla extract, and flaked coconut.
2)    Blend with spatula until the ingredients are well combined and mixture is light and fluffy.
3)    Distribute pudding evenly into 4 ramekins or serving bowls. 
4)    Sprinkle about 2 teaspoons of dark chocolate chips and 1 tablespoon cherries onto each bowl.

Per serving (about 2/3 cup): 300 calories, 16 g fat, 10 g saturated fat, 25 g carbohydrate, 2.5 g fiber, 17 g protein, 340 mg calcium (34% daily need), 175 mg sodium
