Weekly Menu

Mon Dec 14th
Quick Quiche from Bastian Cookbook 
(adding in broccoli slaw & Lap Cheong aka Chinese Sausage)


Tue Dec 15th
Mini Meat Loaf Muffins (in a regular muffin tin) with edamame (from frozen)


Wed Dec 16th
Broccoli & Chicken Casserole from Jenny's Cookbook
(use rice cooker & home made stock to prep brown rice)


Thu Dec 17th
Cod with Leeks & Tomatoes except sub'd tilapia because that's what we've got


Fri Dec 18th
Black-Eyed Pea Chili from Rachel Ray
making this again so that Jon can take some to Ward Christmas Party on Sat Dec 19th
in case there's nothing on the menu there that works for his food allergies

  1. So I actually ended up making three different dinners Monday night. The quiche for the kids & I. Tater tot casserole for our friends & neighbors who just had a baby. & lap cheung (which I ended up not using in the quiche) with carrot parsnip spinach hash for Jon-obviously he can't have quiche, because of his allergies. He was a big help getting the chicken cooked for the casserole, loading the dishwasher, & delivering the meal to our friends.

  2. Jon was craving "pasta", so that's what we ended up having on Tuesday night instead of the meat loaf. We just boiled up two batches of pasta--one for us & one for Jon--& used the ground beef in the sauce, which was OK for everybody/Jon.

    Liked how the casserole for Wednesday night turned out--especially since it used curry powder in it! Used frozen florets, leaving them large, which I liked better. But Zoe did mention that she thought they were too big. It was a nice end to my full day of elfing in the kitchen!

    Excited about the new-to-me fish recipe for tonight!

  3. Forgot to mention that I started off Wednesday morning (cold, so thought a hot breakfast would be nice) by making egg nog waffles--again. For some reason, I got the more egg nog-y flavor that I was wanting this time around . . . even though I used the same exact recipe as before! Go figure!

  • Baked Bean Medley - Received this recipe from Don's mom this past year. She won first place at a ward chili cook-off using this recipe many years ago when Don was growing up....
